Bring to a boil and then lower to medium-low for approximately 25 minutes. Set aside.<\/li>\n\n\n\n<li>Preheat oven to 325 degrees. With a knife, cut 10 slits along the ham\u2019s surface and insert the cloves. Place the ham in a baking pan In a small bowl, combine the mustard and brown sugar. Place the Del Monte Gold\u00ae pineapple rings along the top of the pineapple and secure with toothpicks. It&#8217;s a great alternative to the traditional meat and veg as an Easter main course.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Serves 4<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-ingredients-0\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200g Yorkshire Wensleydale<\/li>\n\n\n\n<li>1 packet ready roll puff pastry<\/li>\n\n\n\n<li>1 jar apple chutney<\/li>\n\n\n\n<li>5 tablespoons walnut pieces<\/li>\n\n\n\n<li>Freshly grated nutmeg<\/li>\n\n\n\n<li>1 bag baby spinach<\/li>\n\n\n\n<li>1 large free range egg<\/li>\n\n\n\n<li>1 tablespoon rapeseed oil<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-method-0\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Roll the pastry into a large rectangle and place onto a lightly oiled tray. Prick the pastry with a fork leaving a neat border around the outside of the tart. Gently go around the border with a knife creating a slight indentation to frame the tart.<\/li>\n\n\n\n<li>Brush the border of the puff pastry with beaten egg wash and bake for 20 minutes at 180\u00b0C until golden and crisp.<\/li>\n\n\n\n<li>Remove from the oven and spoon the whole jar of apple chutney into the centre of the pastry, spreading to the edges to create a neat base for the tart.<\/li>\n\n\n\n<li>Place the spinach into a frying pan with a knob of butter and wilt for a few moments until tender, then add the walnut pieces.<\/li>\n\n\n\n<li>Place the spinach and walnuts on the top of the apple chutney taking care to leave the border of the pastry clean.<\/li>\n\n\n\n<li>Return the tart to the oven and heat for a further 6 minutes. Stab the joint several times over with the tip of a small sharp knife and insert one 1\u20442 clove of garlic per incision. Also stick in a little sprig of rosemary per incision to enhance the flavour.<\/li>\n\n\n\n<li>Place the shoulder on the lamb bones with the 2 carrots cut just in half, drizzle over the olive oil and season with sea salt and pepper. Place in the oven at 160c for 4-5 hours, covering with a sheet of foil for the first 3 hours.<\/li>\n\n\n\n<li>With one hour to go, throw in the peeled shallots and remove the foil. When the lamb is cooked and the shallots are also cooked, remove everything from the tray and allow to rest somewhere warm.<\/li>\n\n\n\n<li>Add the tomato puree and flour to the cooking tray and place back on the stove to cook slightly. Then add the stock and bring to the boil.<\/li>\n\n\n\n<li>Strain through a very fine sieve into a clean pan and bring back to the boil, season if required.<\/li>\n\n\n\n<li>Carve the lamb onto a warm serving dish, place the shallots around and put the gravy in a sauce boat. Serve with green vegetables and some potatoes.<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"640\" height=\"480\" src=\"https:\/\/www.goodhomesmagazine.com\/wp-content\/uploads\/2020\/04\/roast_leg_of_lamb.jpg\" alt=\"roast leg of lamb - easter main courses: 4 family favourites - kitchen - goodhomesmagazine.com\" class=\"wp-image-7447\" srcset=\"https:\/\/www.goodhomesmagazine.com\/wp-content\/uploads\/2020\/04\/roast_leg_of_lamb.jpg 640w, https:\/\/www.goodhomesmagazine.com\/wp-content\/uploads\/2020\/04\/roast_leg_of_lamb-300x225.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><figcaption class=\"wp-element-caption\">Photo: <a href=\"https:\/\/www.ukshallot.com\/index.html\" target=\"_blank\" rel=\"noreferrer noopener\">UK Shallots<\/a><\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-duck-breast-roast-squash-and-pearl-barley-risotto\">Duck breast, roast squash and pearl barley risotto<\/h2>\n\n\n\n<p>If you fancy something a little lighter for your Easter main course, opt for this succulent duck and pearl barley risotto.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-ingredients-2\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pack of 2 Gressingham duck breasts<\/li>\n\n\n\n<li>1\u20442 red onion, sliced<\/li>\n\n\n\n<li>350g packet of diced butternut squash<\/li>\n\n\n\n<li>125g pearl barley, cooked in boiling water for 40 minutes and drained<\/li>\n\n\n\n<li>2 cloves garlic, crushed<\/li>\n\n\n\n<li>1 glass white wine<\/li>\n\n\n\n<li>1 chicken stock cube<\/li>\n\n\n\n<li>2 tbsps olive oil<\/li>\n\n\n\n<li>50g butter<\/li>\n\n\n\n<li>1\u20442 red chilli, de-seeded and finely sliced<\/li>\n\n\n\n<li>4 sage leaves, finely sliced<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-method-2\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Score the fat on the duck breasts with a sharp knife. Heat a pan, and sprinkle in a fine layer of salt (no oil), then add the duck breasts skin side down and turn down the heat to let the fat slowly render out until the skin is golden and crispy.<\/li>\n\n\n\n<li>Fry the butternut squash in the olive oil on a low heat until it starts to soften, then add the sliced onion and garlic and cook for a further 5 minutes on a low heat until it softens.<\/li>\n\n\n\n<li>When the skin is crispy, drain the excess fat and place it in the oven at 180\u00b0C and cook for 6 minutes.
