From traditional summer classics like trifles and panna cottas with a creative twist, to zingy lemon possets frozen into a hollowed-out lemon, these crowd-pleasers are bound to be the centrepiece of your <a href=\"https:\/\/www.goodhomesmagazine.com\/inspiration\/spring-tablescape-ideas\/\" target=\"_blank\" rel=\"noreferrer noopener\">summer tablescape<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-lemon-possets\">Lemon possets<\/h2>\n\n\n\n<p>There&#8217;s not much easier when it comes to a refreshing, showstopper summer dessert idea than a lemon posset &#8211; it only uses three ingredients after all. <a href=\"https:\/\/www.bbc.co.uk\/food\/recipes\/lemonpossetwithlemon_85812\" target=\"_blank\" rel=\"noreferrer noopener\">James Martin has one of the best recipes<\/a> around, using 600ml of double cream, 150g of caster sugar and two large lemons (zest and juice only). He says to &#8220;place the double cream and the sugar into a large pan over a low heat and bring to the boil slowly. Boil for three minutes, then remove from the heat and allow to cool.&#8221; <\/p>\n\n\n\n<p>Then you just add the lemon juice and zest and whisk well. You could pour the mixture into serving glasses, but you could also use hollowed-out lemons (cut a slice off the bottom if you&#8217;re doing this, so it has a flat surface to stand on). Then refrigerate for three hours. <\/p>\n\n\n\n<p><a href=\"https:\/\/www.instagram.com\/iamlaurajackson\/reel\/Cz_N-dUo9fY\/\" target=\"_blank\" rel=\"noreferrer noopener\">Laura Jackson<\/a> also does a great version with clementines. She has created the perfect riff on the Spanish classic with her burnt Basque cheesecake with liquorice sauce from her cookbook <em>Eat, Cook, Repeat<\/em>, which she describes as &#8220;easy to make, luscious to eat, this crustless cheesecake \u2014\u00a0soft under its scorched tortoiseshell top \u2014 is a total joy&#8221;.
